Jesus Armas and Miguel Carrion are the foremost authority when it comes to authentic Spanish cuisine.  This is why Tagaytay Highlands chose no less than the two for the Club’s Marbella relaunch. 

 

“When you try the food here, don’t be surprised if it tastes different – mainly because we serve authentic Spanish cuisine,” Miguel Carrion proudly shared. True enough, the authenticity of some of the dishes tends to be compromised because some restaurants adjust the taste to the Filipino palate.  For example, did you know that the real Paella does not really contain chorizo?  You can go anywhere in Spain and you won’t find a single chorizo in their Paella.  “One of the restaurants here started putting chorizo in their Paella that’s why when some people go to our restaurant to eat, they look for chorizo.  So we had to put one in our Paella too,” reveals Mr. Carrion.  “When in Rome, do what the Romans do – so long as food quality and taste is not sacrificed, a few chorizos should not hurt.”

 

A trip to any Spanish Restaurant wouldn’t be complete without sampling the very famous Than Long Crab- gigantic crabs that literally melt in your mouth!  It will truly be a delight knowing that THE man who brought the recipe to the Philippines is the same man who will be dishing out this all-time favorite at Marbella.  Jesus Armas stumbled upon this delectable dish in some hole-in-the-wall Vietnamese Restaurant in San Francisco.  He just added butter and garlic (two of the main ingredients in Spanish cooking) and voila!  Than Long Crab with a Spanish twist that we Filipinos (like me!) have grown addicted to.  Another must-try at Marbella is Señor Armas’ anchovy dish called Boquerones.

 

Truly, the new Marbella by Jesus Armas promises more authentic Spanish dishes, more selections to chose from, more flavorful experiences – you simply just want more!
